Ingredients

3 1/2 cupspeeled and cubed (1/2 inch or 1 cm) PEI Potatoes (about 5 med)875 mL
5bacon slices, reduced salt5
1medium onion, chopped1
1 tbspolive oil15 mL
halfgreen pepper, choppedhalf
5eggs, beaten5
to tastesalt and pepperto taste
1/2 cuplow-fat cheddar cheese, shredded125 mL
1/4 cupsliced green onions or chives50 mL

Instructions

In medium saucepan, cook potatoes, covered, in 5 cm (2 inches) boiling water about 5 minutes or until almost tender, drain. Meanwhile, chop bacon slices into 1/2 inch (1 cm) pieces and cook for 3 minutes over medium-high heat, in large non-stick frying pan. Add onion; cook and stir 5 minutes or until onion is translucent and bacon is crisp. Add oil. Add potato and green pepper, cook and stir about 6 minutes or until potatoes are golden. Reduce heat and add eggs to potato mixture; cook and stir 1 to 2 minutes or until eggs are set. Season with salt and pepper. Sprinkle with cheese and green onions before serving. Makes 5 servings.
